Meat Stock is probably the most important food on GAPS. We use meat stock as a foundational food to heal and seal the gut lining in a “leaky gut”. It provides the building blocks needed, most importantly preserves the amino acids gained from the connective tissue and gelatin to rebuild the duodenum in the small intestine. As an added bonus, you will experience better skin and hair, less inflammation and stronger immunity.
Meat Stock is used exclusively throughout the Intro Diet, to heal and seal, whereas bone broth is used when the gut lining has been healed and for maintenance.
It is not to be confused with or even compared to bone broth, which is made with leftover cooked bones without meat on them. It is cooked much longer and so the delicate amino acids needed for healing are broken down too much. Bone broth is recommended after the gut has been fully healed or after Full GAPS. It is not suitable for a sensitive gut due to the longer cooking period and brings the gelatin out from deep within the bone, which is not what we are trying to achieve whilst doing the GAPS nutritional protocol.
Meat Stock is made from raw meat with a joint in it, or meat with connective tissue and marrow (like lamb shanks, drumsticks, feet, necks), which yield gelatin and certain amino acids particularly proline and glycine. It contains less histamine and is lower in glutamic acid. This is important for people sensitive to MSG, because it can affect their nervous system. The glutamic acid and free glutamates are too much for someone who suffers from ADD, ADHD and autism.
Meat stock can be consumed plain or with added vegetables and the meat removed and added back in like a soup. If on Intro Stage One, peel and seed all vegetables prior to cooking.
It is so delicious when you add some fresh crushed garlic, quality salt, some ferment juice and additional fat to each cup or bowl. If on No Plant GAPS…there are no vegetables added.
GAPS Intro and Full GAPS is nourishing and filling. You do not go without or feel hungry.
Of course, there are foods removed during the initial healing process of Intro, but you are
always fulfilled and actively working on your gut with every sip of meat stock!
